  • Healthy Salmon & Cucumber Dill Salad 
    Balsamic Salmon Wraps

    Winging It! Buffalo Style ~ Cooking With Kristen

    INGREDIENTS 

    2-3 Cucumbers (peepled, halved lengthwise, seeded, sliced or cubed)

    1 cup Sour Cream (low-fat is ok)

    Garlic Powder

    2 tsp Coarse Salt

    Ground Black Pepper

    Fresh Dill

    1 large Red Onion, peeled and sliced

    4-6 Salmon Fillets 6 oz. each, skins removed

    1 Summer Squash

    1 Zucchini (halved lengthwise, seeded, sliced

    1 Leeks (Sliced)

    1 Small Bag Baby Carrots 

    Extra Virgin Olive Oil (EVOO)

    2 Lemons

    1lb. Mesclun Greens Including Spinach (Cleaned and Dried)

     

    Low Fat Tortilla Chips

    1 Package Wraps (Spinach or Sun Dried Tomato)

    Balsamic Dressing

     

    Second Helpings

    1 Wrap

    Mesclun

    Balsamic Dressing

    Top with Broken up Salmon Cold~Wrap, cut in half

    Serve with Side of Cucumber Salad

    Side of chips

     

    STEPS

     

    Preheat Pan or Grill on High for 10 minutes

    Season Salmon with Garlic Powder, Salt and Pepper to taste

    Drizzle with EVOO

     

    Add Salmon Seasoned side down into pan or grill

    Season Salmon with Garlic Powder, Salt and Pepper

    Turn over once Golden Brown on Bottom

     

    Add Sour Cream to Cucumber

    Add Red Onion

    Add Fresh Dill

     

    In Separate Pan Preheat, add EVOO

    Add Remaining Red Onion, Sliced Summer Squash, Zucchini, Carrots, Leeks

    Sauté until desired tenderness

     

    Plate with Side of Mesclun Greens

    1 piece of Salmon with Cucumber Salad

    Side of Vegetables

    Lemon Wedge

    Second Helpings 

    1 Wrap

    Mesclun

    Balsamic Dressing

    Top with Broken up Salmon Cold

    Wrap, cut in half

    Serve with Side of Cucumber Salad

    Side of chips

    BRIDAL BRAIN FOG

    When it comes to brain health, age does not matter.  The center of our body’s nervous system is the brain.  Our brains are our very own personal computer that communicates with every body system. 


    I have coordinated hundreds of events throughout my life so when planning my wedding I didn’t give my brain health or my memory much thought.   Bridal Brain Fog what I starting to call the mental response to stress I was experiencing.   I had to slow down to regain my focus.  Brain fog symptoms include tired eyes, trouble focusing, headaches, and inability to concentrate.  I know I’m not alone; I’m going to share how to stay focused, increase your stamina and be more efficient in all areas of your life. 

     

    Use what you know well.  I maximized my New Sun account.   I shared my love of essential oils with my guests as a special favor for my bridal shower.  I ordered several bottles of Almond Oil and my favorite Essential Oil. To stimulate your mental body, I suggest Bergamot, Happiness (Joy) and Lemongrass.   I purchased containers with lids from the craft store and I made essential oil gifts for each one of our guests at the shower.  The aroma of the oil at the shower filled the air creating a fragrant and joyful backdrop. The best part is that this gift reflected me to my friends and family.  It also promoted a balanced nervous system. Everyone was happy.

     

    Starting a supplement program at least three months before the big event can include Ancient Minerals Plus a liquid supplement that is high in antioxidants.  One of the greatest strengths of Alpha Lipoic Acid is its protective action on the nervous system and the brain. Focus and Attention spray is an effective homeopathic-type energetic product that activates the energy centers and pathways in the body to help the mind focus when flighty and fuzzy. Also helps the body to calm down and relax, the mind to focus and clears mind fog.  Children having difficulties attending to tasks, teenagers needing support with focusing in school and tests, adults with mind focusing situations such as work tasks and bill paying, can benefit from such a very versatile-use energetic formula.

     

    Keep a daily list of tasks and try not to roll it over to the next day.  Schedule “time off” from planning the event.  Practice meditation, a few deep breaths as a way of calming your mind.   I had one designated go-to-girlfriend that we agreed that once I felt the fog, I could talk with her and she’d tell me if I missed a step.  To the bride-to-be, start your supplements today, keep a journal, take lots of pictures, stay hydrated and get lots of rest!

    According to Webster’s American English Dictionary, Resolve as a verb means,

    1: find an answer to 2: make a formal resolution (resolved; resolving) and as a noun

    1: something resolved 2: steadfast purpose- resolvable

    Resolution is a noun 1: process of resolving 2: firmness of purpose 3: statement of the opinion, will or intent of a body

    If you are struggling with your resolutions this New Year, perhaps the deeper understanding of the meaning will assist you with find the best way to be a success in 2011.  Your resolution maybe to just resolve! Make the statement and be specific “Today, I resolve to ______” You fill in the blank as many times as you need to.  It may change each day or even task to task.  Today I resolve to drink 24 ounces more of water…today I resolve to clean out the junk drawer…today I resolve to call an old friend…As all of your  ‘Today, I resolve to’ statements add up you will find that by dedicating yourself to one item at a time you have actually accomplished more than you ever imagined.  The energy debt that is created by unfinished business costs us energetically more than anyone would want to recognize.  It all starts with just one…’Today, I resolve to….’

    Here is a demonstration on how to apply this to any situation-

    Determine ownership of the issue.

                    If it is your issue, move onto next step…if not walk away with ease and gratitude (it’s just that simple)

    Is this issue Resolvable?

    If yes, by whom? If yourself, follow to next step

    By asking this question you may find that there are more questions that come up during this process which allows you to go back to question #1 and start the process all over again.  Remember it’s simple.

    What is the purpose?

                    If you find yourself here and you are asking what the purpose is, allow yourself the opportunity to look at the situation at hand by being solution based versus emotionally based.  This approach will provide you the ability to look at any situation with these 3 easy steps.

    You are entitled to have a calm stress free approach to any situation.  See any situation without taking it personally and emotionally.  If we take on every situation in life personally we are not giving our emotions a rest often leading to fatigue, adrenal failure and having a stressed nervous system. Start to practice this today!!

    Best of luck with your resolutions, you are already one step closer to your goals.
